Peanut Butter S’mores Skillet Cookie



Ingredients

  • 2 ¼ c. all-purpose flour
  • 1/2 c. graham cracker crumbs
  • 1 tsp. baking soda
  • 1/2 tsp. Kosher salt
  • 1 c. butter, at cool room temperature
  • 1 c. brown sugar, packed
  • 1/4 c. granulated sugar
  • 2 large eggs
  • 1 ½ c. creamy peanut butter (not natural)
  • 1 tsp. pure vanilla extract
  • 1 c. mini marshmallows
  • 1/2 c. mini semisweet chocolate chips
  • 1 small chocolate bar

Instructions

  1. Preheat oven to 350 F. I use a 10.25-inch cast iron skillet. If you choose to use another type of oven-safe skillet, grease. well
  2. In a medium bowl, whisk together flour, graham cracker crumbs, baking soda, and salt together. Set aside.
  3. In a large bowl, beat butter and sugars together until well-combined.
  4. Beat in eggs one at a time until well-combined.
  5. Add peanut butter and vanilla, and beat until combined.
  6. Stir in dry ingredients just until incorporated.
  7. Add mini marshmallow and chocolate chips. Stir in.
  8. Spread cookie dough into prepared skillet, slightly mounding the cookie dough in the middle.
  9. Break chocolate bar into pieces, and gently press into surface of cookie.
  10. Bake for 25-35 minutes, or until center is set and edges are light golden brown.
  11. Let cool for 5-10 minutes before serving.
