Hot Fudge Sundae Cupcakes


Ingredients
Cupcakes
  • 1/2 c . vegetable oil
  • 1 3/4 c . granulated sugar
  • 3 large eggs
  • 1 tsp . vanilla extract
  • 2 c . all-purpose flour
  • 3/4 c . unsweetened cocoa powder
  • 1 tsp . baking soda
  • 3/4 tsp . baking powder
  • 1/2 tsp . salt
  • 1 1/2 c . buttermilk

Frosting
  • 1 recipe Whipped Buttercream Frosting or other vanilla frosting

Topping
  • Chocolate syrup
  • Sprinkles
  • Chocolate Shavings
  • Chopped Nuts
  • Maraschino Cherries

Instructions
  1. To make the cupcakes, preheat oven to 350 F. Grease or line 28 cupcake tins.
  2. Beat together vegetable oil and granulated sugar.
  3. Beat in eggs, one at a time until well-combined.
  4. Stir in vanilla.
  5. Add flour, cocoa powder, baking soda, baking powder, and salt. Stir until mostly combined.
  6. Stir in milk until combined.
  7. Divide batter among cupcake tins.
  8. Bake for about 18-25 minutes, or until a wooden toothpick comes out clean.
  9. Cool cupcakes on wire cooling rack until room temperature.
  10. To assemble, top cooled cupcake with frosting.
  11. Drizzle chocolate syrup over frosting, and then top with sprinkles, chocolate shavings, nuts, and a cherry just before serving.
