Ingredients
Cupcakes
- 1/2 c . vegetable oil
- 1 3/4 c . granulated sugar
- 3 large eggs
- 1 tsp . vanilla extract
- 2 c . all-purpose flour
- 3/4 c . unsweetened cocoa powder
- 1 tsp . baking soda
- 3/4 tsp . baking powder
- 1/2 tsp . salt
- 1 1/2 c . buttermilk
Frosting
- 1 recipe Whipped Buttercream Frosting or other vanilla frosting
Topping
- Chocolate syrup
- Sprinkles
- Chocolate Shavings
- Chopped Nuts
- Maraschino Cherries
Instructions
- To make the cupcakes, preheat oven to 350 F. Grease or line 28 cupcake tins.
- Beat together vegetable oil and granulated sugar.
- Beat in eggs, one at a time until well-combined.
- Stir in vanilla.
- Add flour, cocoa powder, baking soda, baking powder, and salt. Stir until mostly combined.
- Stir in milk until combined.
- Divide batter among cupcake tins.
- Bake for about 18-25 minutes, or until a wooden toothpick comes out clean.
- Cool cupcakes on wire cooling rack until room temperature.
- To assemble, top cooled cupcake with frosting.
- Drizzle chocolate syrup over frosting, and then top with sprinkles, chocolate shavings, nuts, and a cherry just before serving.
