Ingredients
Gingerbread
- 1/2 c. vegetable oil
- 1/2 brown sugar, packed
- 1 c. molasses (not blackstrap)
- 2 large eggs
- 2 ¼ c. Bob's Red Mill Organic Unbleached All Purpose White Flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 2 T. ground ginger
- 1 T. ground cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. salt
- 1/2 c. buttermilk
- 1/2 c. hot cider
Glaze
- 1 1/3 c. powdered sugar
- 3 T. apple cider
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- pinch ground cloves
Instructions
- Preheat oven to 350 F. Grease and flour 2 8x4-inch pans.
- In a large bowl, stir together the oil and sugar.
- Stir in the molasses.
- Beat in the eggs.
- In a separate medium bowl, sift together the flour, baking soda, salt, ginger, cinnamon, cloves, and salt.
- Stir the dry ingredients into the molasses mixture until just combined.
- Stir in the buttermilk and hot cider.
- Pour into the prepared pan.
- Bake 35-45 minutes, or until a knife inserted in the center comes out clean.
- Allow to cool in pan until about room temperature.
- To make the glaze, whisk together all of the glaze ingredients.
- Remove gingerbread from pans.
- Drizzle with glaze.
