Gingerbread Loaf Cake with Apple Cider Glaze


Ingredients

Gingerbread
  • 1/2 c. vegetable oil
  • 1/2 brown sugar, packed
  • 1 c. molasses (not blackstrap)
  • 2 large eggs
  • 2 ¼ c. Bob's Red Mill Organic Unbleached All Purpose White Flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 2 T. ground ginger
  • 1 T. ground cinnamon
  • 1/2 tsp. ground cloves
  • 1/2 tsp. salt
  • 1/2 c. buttermilk
  • 1/2 c. hot cider

Glaze
  • 1 1/3 c. powdered sugar
  • 3 T. apple cider
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • pinch ground cloves

Instructions

  1. Preheat oven to 350 F. Grease and flour 2 8x4-inch pans.
  2. In a large bowl, stir together the oil and sugar.
  3. Stir in the molasses.
  4. Beat in the eggs.
  5. In a separate medium bowl, sift together the flour, baking soda, salt, ginger, cinnamon, cloves, and salt.
  6. Stir the dry ingredients into the molasses mixture until just combined.
  7. Stir in the buttermilk and hot cider.
  8. Pour into the prepared pan.
  9. Bake 35-45 minutes, or until a knife inserted in the center comes out clean.
  10. Allow to cool in pan until about room temperature.
  11. To make the glaze, whisk together all of the glaze ingredients.
  12. Remove gingerbread from pans.
  13. Drizzle with glaze.
