60 Minute Cinnamon Rolls with Cream Cheese Icing


Ingredients

Dough

  • 3/4 c. warm water (about 105 F)
  • 2 T. active dry yeast
  • 1/2 c. granulated sugar
  • 6 T. butter, at room temperature
  • 2 large eggs
  • 4 c. all-purpose flour, plus more for dusting
  • 1 tsp. kosher salt

Cinnamon Filling

  • 1/4 c. butter, melted
  • 1/2 c. brown sugar, packed
  • 1/2 c. granulated sugar
  • 2 T. cinnamon

Cream Cheese Icing

  • 4 oz. cream cheese, softened
  • 2 T. butter
  • 1 ½ c. powdered sugar
  • 1 tsp. pure vanilla extract
  • 1 tsp. – 1 T. milk
  • Pinch of salt

Instructions

  1. Grease a 12-cup muffin tin; set aside.
  2. In the bowl of a stand mixer fitted with the paddle attachment (or in a large bowl if mixing by hand), combine the warm water, yeast, and sugar. Let stand 5-10 minutes until foamy.
  3. Add butter to the yeast mixture. Mix until the butter is broken up, about 1 minute.
  4. Beat in the eggs, one at a time.
  5. Add the flour and salt, and mix at low speed until incorporated, about 2 minutes. Scrape down the side of the bowl.
  6. Increase the speed to medium, and mix the dough for 2 minutes longer. The dough will still be soft and a little sticky.
  7. Cover bowl with plastic wrap, and let stand for 10 minutes.
  8. On a lightly floured work surface, roll the dough out to an 11x17-inch rectangle.
  9. In a small bowl, prepare the filling by mixing together the brown sugar, granulated sugar, and cinnamon.
  10. Brush the melted butter over the dough and sprinkle evenly with the cinnamon mixture.
  11. Beginning at a long edge, roll up the dough as tightly as possible, pinching the seam.
  12. Cut the rolled dough into twelve pieces, and set them in the muffin cups cut side up.
  13. Cover, and let stand for 15 minutes.
  14. Preheat oven to 400 F.
  15. Set the muffin tin on a baking sheet, and bake for about 15 to 20 minutes, or until the buns are golden brown.
  16. While the buns are baking, make the icing.
  17. Beat together the cream cheese and butter until well-combined.
  18. Mix in the powdered sugar, vanilla, enough milk for desired consistency, and salt.
  19. Let the buns cool in pan for 5 minutes.
  20. Remove the buns from the pan, and let cool for about 10 more minutes. You want them to be warm but not piping hot.
  21. Spread with icing, and enjoy!
